There is a ton of cheese lying in storage -1.4 billion pounds - as Americans shift to foreign varieties and exports to China and Mexico are hurt by the tariffs war.  Americans are becoming more adventurous in their cheese eating habits. Many say they cannot stand eating processed cheese anymore. Processed cheese consumption is going down just as foreign cheese varieties are picking up strongly. Mozzarella cheese is up and cheddar cheeses is down with mozzarella popular in pizzas.   Cheese producers such as Sargento in Wisconsin are shifting to Gouda, a Dutch variety and other European cheeses as they adjust to the changing habits of Americans tired of processed stuff including processed cheeses.  Cheesemakers from Ireland and Quebec and local makers in Wisconsin were ramping up their production of cheese when the trade tariffs with China and Mexico hit dairy products. Cheese exports to China are down 63%. The result is that 1.4 billion pounds of cheese are now in storage in cold storage warehouses. Americans still eat a record 37 pounds of cheese every year, but processed cheese per capita is now half of what it was in 2006. Netherlands based Gouda producer Campina is expanding in the U.S. to meet the demand for gouda and other varieties.  Dairy farmers that supply cheese makers are hurt. Milk prices are down around 40% from a 2014 peak. 600 dairy farms closed in Wisconsin in 2018 alone. ...

As the Nation looks to take care of it's farmers, a look at two farms in Wisconsin dairy country. One is a milk farm Norm Lane in Chili Wisconsin which supplies 200,000 pounds of milk to a cheesemaker Nasonville Dairy in Marshfield, Wisconsin. Shown in this story in NYT are the Master Cheesemaker Ken Heimann who runs the Nasonville Dairy which produces Colby, Cheddar and other cheeses. Also shown are Josh Meissner whose grandparents started the mil dairy Norm Lane in 1946.  The economics of dairy farms are such that they depend on the government to set the price and with all the competition the margins on milk are quite thin. This is true for cheese also where there is the West Coast production of cheese that has larger output and greater mechanization than Wisconsin's cheesemakers. What keeps the dairy industry going these days is the production of whey protein a byproduct of the cheese making process. This has much higher margins with prices up from $3 a pound of whey protein to $10 a pound. On a typical day the Nasonville Dairy can turn out 150,000 pounds of cheese, and 150,000 pounds of liquid whey protein. ...

People in China are drinking more milk and cream desserts, and eating more cheese with a shift in eating habits. Traditionally this was not a big part of Chinese food. Wholesale prices of skim milk powder have surged by 26%-47% in the U.S. and Europe with this increased Chinese demand. Earlier China imported more milk powder for baby infant formula after tainted product was discovered in domestically produced baby milk powder. In 2019 China imported about 33% more skim milk powder and 23% whole milk powder than 2018. 

Parents encourage milk drinking habit. Even the higher lactose intolerance in people from East Asia is not a problem in this increase in dairy consumption. Beneficiaries of this increase in demand are farmers in America, Europe and New Zealand after several years of difficult conditions. Dry conditions in Australia and northern Europe, higher feed costs, hurt dairy farmers.

More than half the calories Americans eat is from ultra processed foods- it makes RFK Jr. admonition "Eat Real Food" a Big Deal. It is all about eating whole foods and avoiding packaged foods and sweetened foods. It says NO to more than 10% of daily calories from added sugars. It says whole milk and yogurt is good for you.

“My message is clear,” Kennedy told a White House press briefing. “Eat real food.” The new Dietary Guidelines take out the pyramid used for 30 years and make the message clear and outright plain- avoid artificial foods, packaged foods, added sugars, ultra processed foods altogether. A plate now replaces the pyramid and shows a carton of whole milk at the top, a block of cheese, a steak., fruits and vegetables, whole grains.

Swiss dairy farmers cutting cheese production by 5-10% to tackle temporary US tariff rate of 39%.  Gruyere and Emmentaler cheese to US make up 13% of Swiss cheese exports. Swiss dairy farmers are looking for markets in Asia and waiting for trade negotiations to bring tariffs down so that they can bounce back. The cow is sacred in Swiss Alpine country because of its role in cheese and mil chocolate production for overseas markets. Switzerland's cheese exports are $830 million in 2024 compared to about $7 billion for Germany, $6 billion for Netherlands, $5 billion for Italy and $4 billion for France, and $2.5 billion for the US. Overall Switzerland is a small exporter for a country the size of Virginia. Much of the extra milk production from a bumper harvest in 2025 can be converted into baby milk powder  and exported to China and India. In trade negotiations the Swiss became complacent even condescending and took the US market for granted. This will now change as the Swiss now have time for some soul searching on how best to negotiate a deal that respects the interests of both nations. ...

Elle St. Pierre, a 1500m runner who came in tenth in the 2021 Tokyo Olympics, who is also a Vermont dairy farmer, says she believes in the guidelines for three dairy servings a day for the protein, calcium and Vitamin D. St. Pierre says she returned to running after a baby with a diet rich in cottage cheese, cheese and yogurt. It has helped her avoid bone injuries.

Kraft is looking at its staple pantry products in a different light to give them new life. Kraft products like Bull's Eye barbecue sauce, Chips Ahoy, Oscar Mayer, Miracle Whip and Philadelphia Cream Cheese are all getting new marketing campaigns. This is similiar to what is happening across the food industry, as companies like Campbell, ConAgra, General Mills, Heinz, Hershey, Hormel, Kellogg and Smucker, all of which have staple pantry products, are trying to give new life to old staples. Kraft marketing executives say the idea is to work not just on the rational side as they have done in the past by emphasizing price. For Macaroni and Cheese, Kraft would say to cost conscious consumers in this recession, it costs about 1 dollar a box. One headline even described this as a small price for a big cheese eating grin. Now the advertsing budget has been increased by 30% to $50 million, and the focus has shifted to bringing out the emotional attachment to this product of young and old alike. British prime minister Boris Johnson says he is cutting down on carbohydrates, chocolate and late night cheese, and urges Britain to take up healthy diets. In a video posted on Twitter he says he is "doing everything I can to lose weight, and to feel fitter and healthier. I've been eating less carbs, avoiding chocolate, no more late night cheese."

As a result of the new lifestyle and eating habits which includes taking early morning runs, he says he feels a lot more energetic and healthier, "I feel full of beans" as he calls it using the British expression, and he "thoroughly, thoroughly recommends it."

This essay from the Yale-Griffin Prevention Research Center which puts focus on preventive medicine looks at the food we eat in a different way. In order to have a real conversation on food it says ignore the latest fads on nutrition on keto, paleo or other diets, and think about how our ancestors ate in a healthy way that both prevented disease and provided the right nutrition. It was mostly plants as meat was not freely and easily available. So much so that the consumption of meat and animal protein may have gone up by as much as 90% today. Processed foods did not exist, and unprocessed plant foods were there in abundance. They were not called low fat low carb or vegan then. It is during the beginning of the 19th and in the 20th century that the production and marketing of shelf stable, nutrient poor, high calorie, high sugar and salt processed foods replaced the normal way our ancestors had their food leading to the public health crisis of today, both in health quality, outcomes and cost.  It says replace meat and where appropriate dairy healthier plant based beans, lentils, whole grains, and vegetables, fruits so that animal protein gets back to the levels of the centuries before the 20th century shift to processed foods. It says use common sense beans including soyabeans and lentil beans replace meat wherever possible and oats with berries and nuts replace eggs. Vegetable and garbanzo beans salad replaces cheese and yogurt reducing the cheese or yogurt to very moderate levels. Diet should include fresh fruits, nuts and vegetables. Reduce dairy to three portions (cheese, milk), limit calcium intake to daily requirement, and cut down on animal based protein and fat.

A 5.75% increase in government support is lost in inflation. Melissa is a 23 year old student at the University of Bonn with just 25 euros a week for shopping on food in this story in Dw.com. This means living on potatoes, cottage cheese and vegetarian schnitzel. She gets  about 1000 euros a month, 750 euros from the government and 219 euros from her parents. Of this 400 euros go to rent, 300 for semester fees,

How to get smaller supply chain companies with less than investment grade ratings to shift to renewable energy contracts that last 5-10 years when banks have strict lending criteria. Walmart has a solution working with Schneider Electric. Consider that companies are tackling emissions across their entire supply chain. For Walmart this means cutting one billion metric tons of emissions by 2030. Under Gigaton PPA Walmart suppliers can form a group to buy energy. So that Amy's Kitchen, Great lakes Cheese, and Levi Strauss collectively purchased a12 year renewable energy purchase agreement  from a wind farm in Kansas operated by Danish energy company Orsted. Energize is a similar program funded by drug companies Pfizer, Biogen and others for their supply chain and delivered by Schneider Electric. Consider that for Microsoft's 13 million metric tons of carbon dioxide emissions, 96% come from the supply chain. It needs to cut emissions by half by 2030, a big challenge. In the European Union the solution being considered is for the European Commission to offer state backed and market backed guarantees for deals. Guarantees would be offered by member states of the EU or banks and insurers to provide backing for purchase agreements buyers to overcome credit constraints. ...

Panera casual food restaurant chain plans to cut 150 artificial sweeteners, colors, flavors and preservatives from the menu items by the end of 2016. Panera has 1600 restaurants for sandwiches, salads and soups in the U.S. and Canada. This includes fat substitutes and propylene glycol. The tariffs are 270% on milk, 245% on cheese and 298% on butter, according to the CBC. These tariffs are designed to protect the dairy industry in Quebec. In Canada the tariffs are referred to as "supply management system."  Canadians in the western provinces are used to paying higher prices on dairy products than prices in the U.S. Canadian prime minister Trudeau has declared that he is "100 percent ready" to defend these tariffs. Mr. Trump has brought this up in his talks with Trudeau.
