Peas, legumes, beans are a CLEAR WINNER says the Oxford Environmental Institute, both for reducing emissions related to climate, and for fibre, vitamins and minerals, and cost.

Dr Marco Springmann, from the Environmental Change Institute, Oxford says-

 “Unprocessed legumes such as peas and beans were the clear winner in our assessment. They performed well from all perspectives, including nutritional, health, environmental and cost."

Next come tofu and tempeh and other vegetarian processed foods. Beans are the simplest and the highest in fibre, helping to increase life spans by 6%, which with good sleep and clean air, exercise and other nutritional content ,could add up to increase lifespan by a fifth and significantly improve the quality of life, reduce unnecessary healthcare visits and cost when attention is paid to the very basics of the basics.

Dotsie Bausch, a cyclist who won a medal in the 2012 London Olympics before turning 40 believes in a non dairy diet. Elle St. Pierre, a 1500m runner who came in tenth in the 2021 Tokyo Olympics, who is also a Vermont dairy farmer, says she believes in the guidelines for three dairy servings a day for the protein, calcium and Vitamin D. St. Pierre says she returned to running after a baby with a diet rich in cottage cheese, cheese and yogurt. It has helped her avoid bone injuries.

The increasing use of millet grains to substitute for wheat and rice is good for India as it copes with climate change. Millet grains are more resilient in the current heat waves that will continue for some time. Millet grains are also better from a nutritional perspective. The entire chain, planting season timing, irrigation and fertilization of crops, need to be researched and the research used to prepare for climate change with new agricultural practices, say experts. Nutri cereals such as jowar, raagi, bajra, have the physiology to be resilient and have lower water demands, higher tolerance for coarse soils and heat, says a professor of ecology at Columbia University. The UN has declared 2023 as the Year of Millets and PM Modi has also launched a campaign for greater use of Millet grains. Millet grains have a high level of iron, fiber and certain vitamins.  With obesity increasing in all countries  after the world moved away from these Millet grains and other ancient grains the time has come for a return to the more nutritious grains of the past. Only one or two generations ago in our families history these Millet grains and ancient grains were used widely resulting in better health and fewer of todays medical conditions. ...

Mick Clegg worked with Christiano Ronaldo as his athletic trainer during his first spell with Manchester United. At the time Ronaldo was 18-24 years. During that time Ronaldo did not lift heavy weights, instead he used light weights and gradually stepped up the intensity with repetitions or changing the weight lifted.  Ronaldo is on a Mediteranean diet with particular attention to protein for the training he does. Without the diet he would not have the body he has with hardly any fat. He also takes carbohydrates to make sure he keeps up his energy level, and vitamins, minerals.  Mick Clegg points out that people on Mediterranean type diets take afternoon naps and Ronaldo takes a nap in the afternoon. A 40 minute nap in the afternoon after eating helps one to recover from the hard work of the morning, says Clegg. Christiano's mental attitude stands out in Clegg's experience working with him- his determination. He set a goal of working harder than Welshman Ryan Giggs, and was keen on taking the advice of experts and incorporating it into his routine. It is this that makes Ronaldo the player that he is. There is also a sense of calm about Ronaldo in a game where he remains composed till an opportunity comes late in the game as in the game with Villareal. He says customers are under alot of pressure, and he sees what they buy, delaying purchases and the buying at midnight on the first of the month. Apparel sales are down and so are discretionary purchases and basic necessities and things like vitamins and the $4 generic pharmaceuticals are up. Walmart sees 140 million customers in stores every week, and has information systems to show how customers are buying, which gives it a unique lens through which to see changes in buying behaviour after the financial crisis and increasing numbers of jobless. Customers are saying he says that I will invest in basic needs and defer discretionary purchases. Among other things he talks about sustainability as something his company is paying attention to.

Executives in merchandising at Walmart, Target and other stores discuss trends with the WSJ. There is adisciplined shopper with less browsing on the aisles. FOod is up on the list. Private label groceries at lower cost are selling well. At Walmart sales are up for refrigerated pizza,lower grades of meat. Ground beef and chicken sell way better than steak and beef. And carbohydrates are doing better than protein foods, so that pasta is doing well. Staying at home and entertaining at home is the trend says Fleming of Walmart, from the take and bake pizza at $5 to the movie and popcorn. Which is why the luggage section and trvel is slow, and flat screen tv's are selling well. Vitamins, herbs and plants for vegetable gardens are up as customers try to plant their own vegetable gardens. Car maintenance and repair is big, sales of motor oil, filters and tires. are some of Walmarts big sellers. Whatever makes the car last longer is considered attractive by customers. And home repair items are selling well at Home Depot....

Diet consultant Tallmadge says be careful about reduced fat peanut butter, enhanced water, energy bars and multigrain foods. She says reduced fat peanut butter is worse than ordinary peanut butter because it takes away the nutrients in the oil. Enhanced water can be nothing more than sugary drinks with vitamin added, better to drink clean tap water. Sugar is a major ingredient in energy bars. Better to snack on fruits and veggies and yogurt, or carry nuts and dried fruits if hiking or doing outdoor activity. And watch out for the marketing words saying its multigrain, what you want is whole grain not refined starch. Don't be fooled by the marketing of the packaged foods industry, check the ingredients carefully, because labels such as "low fat," "high fiber," "multigrain," and "natural," don't mean much. Eating right starts with selecting food carefully and diligently, and goes a long way in preventing many of the diseases and problems coming out of poor eating habits.

This excellent article by Peta Bee looks at how we can do anti-ageing efforts to keep our immune systems strong as we become older. She looks at work by an expert in immune cell biology, Janet Lord, who is head of the Institute for Inflammation and Ageing at Birmingham University. It is now proven that the link between ageing and immune systems can be guided in constructive ways. At sixty and seventy years age one can have the immune system of a 30 year old by doing a couple of simple things which are covered here from taking 10,000 steps a day, high intensity interval training on some days each month, occasional fasting on some days, high fibre diet and vitamin D. Walking, running or other forms of exercize affect a particular form of immune function called neutrophil movement in positive ways. Neutrophil movement because these cells are the main defense against the forms of bacteria that cause pneumonia. Neutrophils in older adults behaved in ways similar to that found in 30 year olds when doing 10,000 steps a day of exercize. Dr. Lord and other researchers have found. Dr. Jenna Macciochi, a lecturer in immunology at the University of Sussex, says about 70% of our immune system resides in our gut, making gut health very important for our immunity. Macciochi is the author of Immunity: The Science of Staying Well. Important for gut or gastrointestinal health is the eating of food that has prebiotic and probiotic effect. This helps reverse the decline of immunity coming with ageing.When we chew down on fibre in vegetables, fruit, beans or lentils we have beneficial byproducts called postbiotics that act as an interface between diet and immunity, that change the personalities of cells and circulate in our blood for regulation of immune system, says Dr. Macciochi. Postbiotics from eating dietary fibre tune up specific virus fighting cells that help us fight infections from flu and viruses, studies show says this report in The Times. Women in the UK get only 17g per day, men 20 mg per day of fibre. We need 30 mg per day of fibre and to do this we need to increase our intake of vegetables, fruits, whole grains, nuts, seeds and pulses. Also important is avoiding the inflammation that comes with ageing called inflammageing, says Dr. Macciochi. To do this do resistance training, weights, or using body weight such as lunges, push ups, squats. When our muscles move we produce hormones called myokines that help our immune cells function and keep inflammation down. She believes strength work is an absolute essential to rejuvenate our immune age. ...

About 2.5 million Americans over the age of 55 are vegetarian according to a 2012 Harris poll done for the Vegetarian Resource Group. There is a common perception of vegetarianism as purely vegetable type foods. However vegetarianism in India is practiced with the inclusion of all dairy products- milk, yogurt, and buttermilk. Not only are they included, they play a significant role in the diet. Also included and playing a large role in the diet are lentils and beans which provide a significant source of protein. When the idea of vegetarianism is broadened to a more normal vegetarianism as practiced in countries like India and includes dairy, lentils and beans, the diet is able to provide most of the nutrients needed. By including this kind of vegetarian food as an integral part of the diet and reducing meat is another way the health needs of Americans facing a high rate of obesity and other medical problems can be met. If insurance companies were to give incentives for increased consumption of these vegetarian foods and lowered consumption of meat, and the public was made aware of its benefits through advertising, the cost of health care in the U.S. could be brought down....
